The defining dish of Yucatecan cuisine. Pork marinated in bitter orange juice and achiote paste (annatto seed), then traditionally wrapped in banana leaves and slow-cooked in an underground pit (pib) for hours until it becomes impossibly tender and deeply colored. Served in tacos with pickled red onion. The Yucatan version is unlike any taco you have had elsewhere.
What's in it: Pork shoulder, achiote paste (annatto, cumin, black pepper, cloves, garlic, oregano), bitter orange juice, banana leaves. Served with pickled red onion, habanero salsa, and corn tortillas.

A basic cleaning here costs a third to a half of the US price, and it is not a discount version. Most Mexico City clinics in expat areas carry international certifications and follow the same sterilization standards you would expect at home. The catch is not quality, it is picking a clinic with good reviews instead of the cheapest storefront you find.

โ Plan what to do with your mail and US address
Once you move to Mexico, you still need a valid US or Canadian mailing address for bank statements, government correspondence, IRS notices, credit cards, and packages. Mexico's postal system is unreliable for important mail. A virtual mailbox service solves this cleanly.
Virtual mailbox services like Traveling Mailbox or Virtual Post Mail give you a real US street address that receives your physical mail, scans it, and lets you view it online from anywhere in the world.
Choose a service that offers a real street address (not a PO Box) โ many banks and financial institutions won't accept PO Box addresses.
Forward important mail: notify your bank, IRS, SSA, and any subscriptions of your new virtual mailbox address before you leave.
Some expats use a trusted family member's address instead โ this works but creates complications for taxes, voter registration, and driver's license renewals. A virtual mailbox is cleaner.
